Ingredients:
- 1 can 15 oz of hickory baked beans
- 1/4 cup brown sugar
- 1 cup shredded cheddar cheese
- 4 large flour tortillas
- 1/2 cup diced red onion
- 1/2 cup diced green bell pepper
- 1/2 cup diced cooked bacon
- 1/4 cup chopped fresh cilantro
- 2 tablespoons vegetable oil
Instructions:
In a saucepan, combine the hickory baked beans and brown sugar
Cook over medium heat, stirring occasionally, until the beans are heated through and the brown sugar is melted
Remove from heat and set aside
Place one flour tortilla on a clean surface and sprinkle with 1/4 cup of shredded cheddar cheese
Spread a quarter of the sweet hickory baked beans mixture over the cheese
Sprinkle 2 tablespoons each of diced red onion, green bell pepper, and cooked bacon over the beans
Top with 1 tablespoon of chopped cilantro and an additional 1/4 cup of shredded cheddar cheese
Place another flour tortilla on top and press down gently to seal the quesadilla
Repeat the process with the remaining tortillas and filling ingredients
In a large skillet, heat 1 tablespoon of vegetable oil over medium-high heat
Carefully place a quesadilla in the skillet and cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted
Remove from the skillet and let it cool for a minute before slicing into wedges
Serve your Brown Sugar Hickory Baked Bean Queso-dillas hot, with additional chopped cilantro as garnish if desired
