A creamy and comforting soup with tender chicken, cheese-filled tortellini, and a rich Alfredo sauce base.
Ingredients:
- 2 cups cooked chicken, shredded
- 1 package 9 ounces cheese tortellini
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions:
In a large pot, heat olive oil over medium heat
Add diced onion and minced garlic, cook until softened
Pour in chicken broth and bring to a simmer
Add shredded chicken, cheese tortellini, and dried basil
Simmer for about 10 minutes until tortellini is cooked through
Stir in heavy cream and grated Parmesan cheese, simmer for another 5 minutes
Season with salt and pepper to taste
Serve hot, garnished with chopped fresh parsley
